Easy Plum Tart Recipe with Almond Crumble
Ingredients
Tart Base
- 230 g flour or white spelt flour
- 80 g ground almond
- 60 g caster/fine sugar
- 125 g cubed cold butter
- 1 tsp baking powder
- 2 tbsps sour cream
- 3 egg yolks
- 1 tbsp oil (optional)
For the Almond Crumble
- 1/3 dough
- 80 g toasted almond flakes
- 1 tsp cinnamon
For the Plum Topping
- 7-8 medium plums, stoned and chopped into chunks
- 1 tbsp cornstarch for tossing plums in (optional if the plums are very juicy)
Instructions
- Mix sour cream, egg yolks and oil and set aside.
- In a standing mixer, with paddle attachment, mix together flour, ground almond and butter. Once it resembles breadcrumbs, add wet ingredients and mix until just combined.
- Cut out 1/3 of the pastry and set aside in the fridge.
- Line 23cm round baking tin with baking paper, bottom only. Press 2/3 of the dough in including the sides and pre bake for about 20 minutes at 175 degrees.
- Half plums, add cornstarch, vanilla sugar if using, cinnamon and cloves. Mix and spread over pre-baked pastry.
- To the 1/3 of dough and flaked almonds and cinnamon ( optional ) and crumble it until it breaks into smaller crumble pieces and spread over tart.
- Bake for about 35-40 minutes at 175 degrees.
- Let cool down before taking out of the form.
